In the world of gluten-free baked goods, we commonly come across products that taste “gluten-free”, meaning that they just don’t taste quite as good as their gluten-filled counterparts. The flavor might be off, or the texture is a little too moist or a little too crumbly. These products are often made with refined flours that put us on a blood sugar rollercoaster for the rest of the day. But as the market for gluten-free foods continues to expand, we are seeing more and more products available that taste great and offer more nutritional value. Flax 4 Life muffins are a good example.
Ground flax seed is the only type of flour used in these muffins. It provides great flavor and a nice texture that is moist, firm, and chewy without being crumbly. The ground flax also provides 8 grams of protein, and a whopping 10 grams of fiber per muffin! Move over Shredded Wheat! Flax is also chock full of plant compounds called lignans. Lignans support hormone health in both men and women. Be aware, however, that these muffins do contain quite a bit of sugar – each muffin has in the neighborhood of 26 grams of the stuff. Fortunately, it’s not high-fructose corn syrup, but still, sugar is sugar. Flax 4 Life muffins are available in six different flavors. This company also makes brownies, granolas and sandwich buns. These muffins retail for around $5.25 for a 4-pack.
One of the greatest things about Flax 4 Life Muffins is that they are Certified Gluten-Free by the Gluten Intolerance Group. This means that the muffins have been tested and shown to contain less than 10 ppm of gluten. Hooray! Even those with Celiac Disease will be able to enjoy these treats!
Flax 4 Life muffins will make a great addition to your breakfast, afternoon tea, or brunch with friends and family. While they do contain a fair bit of sugar, at least the sugar is balanced by some good protein and lots of fiber. Best of all, even your guests that eat gluten will love how they taste!
