I happen to love spinach, so I was excited to try the non-dairy, gluten-free version of Amy’s Spinach Pizza when I found it in my local grocer. I thoroughly enjoyed the the taste of the rice crust and spinach and soy-based mozzarella topping. However, be forewarned that if you are looking for a traditional-tasting pizza to replace delivery or take-out you were accustomed to before going gluten-free, this may not be the solution you are looking for.
I would definitely recommend this “pizza” if you are looking for a dairy-free, gluten-free easy appetizer or side dish. I think it would lend itself well to being cut into cracker-sized squares for an easy appetizer or snack platter. It’s also a great main course if you love spinach and aren’t looking for a traditional pie.
