Tuna Munch
Quick and easy; tasty and crunchy all in one meal. Toast the tortillas for even more crunch.
Ingredients
- 1 carrot(s) chopped
- 1 stalk celery chopped
- 2 Tbsp. coconut yogurt
- 8 corn tortillas warmed or toasted
- 1/4 tsp. dill weed
- 4 grain-free tortillas
- 2 tsp. lemon juice
- 1 C. lettuce romaine shredded
- 2 Tbsp. mayonnaise
- 2 Tbsp. no-egg mayonnaise
- 1/2 C. spinach shredded
- 6 1/2 oz. tuna water-packed, rinsed and drained
- 2 Tbsp. yogurt plain
Instructions
- Combine first 5 ingredients in a medium bowl.
- In a separate bowl, mix mayonnaise, yogurt, lemon juice and dill weed; stir well. Add to tuna mixture; toss gently.
- Spoon 1/2 C of mixture into each tortilla.
