Teriyaki Beef Stir-Fry
Flavorful and nutritious beef stir fry. Serve over favorite rice or spaghetti squash for a one pan meal.
Ingredients
- 2 C. broccoli chopped
- 3 Tbs. coconut aminos
- 2 tsp. coconut oil or vegetable oil
- 3/4 lb. flank steak trimmed of fat
- 3 Tbs. g.f. soy sauce gluten free (La Choy or Braggs)
- 4 garlic clove(s) minced
- 1/2 tsp. ginger ground
- 2 tsp. grapeseed oil
- 1 C. mushrooms chopped
- 1/2 onions chopped
- 2 Tbsp. raw honey
- 1 red bell pepper chopped or try orange bell pepper
- 1/4 C. water
Instructions
- Combine first 5 ingredients in an 8” square pan. Cut beef into strips; add to marinade; turn to coat. Cover and marinate in refrigerator 30 min – 1 hour.
- Heat oil in a wok or non-stick skillet, or spray with vegetable cooking spray, to medium high heat. Add onion, broccoli, and bell pepper and cook 5 min. or until crisp tender. Add steak cook 3-5 min.
- Add mushrooms and cook an additional 3 min. or until done.
