Pear Crumble
A warm dish of cinnamon-scented pears with a nutty crumble topping hits your comfort button.
Ingredients
- 1/2 C. almonds slivered almonds, plus 1 Tbsp slivered almonds
- 1/4 C. brown sugar light brown
- 1/4 tsp. cinnamon ground, plus 3/4 tsp for filling
- 1/4 C. coconut oil liquid oil
- 1 Tbsp. cornstarch
- 1/4 C. gf all-purpose flour
- 1/4 tsp. ginger ground
- 1 Tbsp. lemon juice fresh
- 1/4 C. maple syrup
- 3 lbs. pear(s) 3-4 pears, ripe, but firm, peeled, cored and 1/4 inch slices
- 1/2 C. rolled oats Old-fashion rolled oats (not quick-cooking nor instant)
- 1/8 tsp. salt
Instructions
- Preheat oven to 350 degrees. Brush an 8x8 baking dish with oil or cooking spray. Or 9 ramekins.
- Topping:
- Process 1/2 C. of the slivered almonds in a food processor or blender till finely ground. Or you can use almond meal.
- Transfer to a medium bowl and add the oats, 1 Tbsp unprocessed slivered almonds, brown sugar, 1/4 tsp. cinnamon, and salt. Drizzle with 1/4 C. of oil. Stir till well blended.
- Filling:
- Combine the sliced pears, maple syrup, and lemon juice in a large bowl. Sprinkle with cornstarch, 3/4 tsp. cinnamon, and ginger. Stir till the pears are evenly coated.
- Transfer to the baking dish. Sprinkle the crumble topping over over the pears.
- Bake for 45-50 minutes until bubbling and the topping is lightly browned. Let cool for 10 minutes before serving.
- Optional: Serve with a dollop of yogurt or ice cream.
Tip
If you buy organic pears, you can leave the peel on for extra fiber. You can use other seasonal fruits too. I combined pears and strawberries!
