Grilled Salmon and Cucumber Dill sauce
Ingredients
- lemon juice drizzle over fish
- olive oil drizzle over fish, or lemon flavored olive oil
- pepper to taste
- 12 oz. Salmon 3/4" thick fillet
- salt to taste
Instructions
- Drizzle fish fillet with olive oil and lemon. Sprinkle with salt and pepper to your liking.
- Coat grill with cooking spray or cover grill with foil (to avoid cross-contamination), spray foil with cooking spray.
- Place fish skin side up on grill rack or foil. Grill 3-4 minutes, turn fish over and grill 3-4 minutes or desired degree of doneness. Serve with veggies and/or cucumber dill sauce:
- Cucumber Dill Sauce:
- cucumber peeled, seeded, shredded: dry on paper towel
- 1/2 C. sour cream or plain yogurt
- green onions, chopped
- tsp. dill weed or Tbsp fresh dill
- tsp. lemon juice
- tsp. horseradish
- 1/2 tsp. salt
- Combine all ingredients in a bowl, Cover and chill for 30 minutes.
Tip
To get a diamond-shaped crosshatch on the fish, after cooking 1st side for 2 minutes, rotate fish 1/4 turn (45 degrees) and cook another 2-3 minutes before flipping the fish. Can only be done on grill rack, not on foil.
