Nice change from a lettuce salad, flavorful with a little sweetness.
- 2 C. cucumber(s) peeled, thinly sliced
- 1/4 onion(s) sliced thin - (FODMAP)
- 1 tsp. sea salt
- 2 tsp. sugar
- 1 tsp. dill weed
- 3/4 C. rice vinegar
- Mix cucumbers and onions together in a medium bowl. In a separate bowl, mix seasonings with vinegar; pour over cucumbers. Chill 1 hour. Serve.
