Chicken Tostada
Quick tostada packed with authentic natural flavors.
Ingredients
- 1 avocado(s) peeled, pitted - (FODMAP)
- 1 C. tomato(es) diced, divided
- 3 Tbsp. red onion minced, divided - (FODMAP)
- 3 Tbsp. lime juice divided
- 1/2 tsp. sea salt
- 1 Tbsp. garlic clove(s) minced - (FODMAP)
- 1/4 C. cilantro fresh, chopped
- 1 Tbsp. jalapeno pepper seeded, minced
- lettuce romaine shredded
- 2 C. chicken breasts cooked, shredded
- 8 corn tortillas
Instructions
- Mash avocado in a small bowl with fork. Stir in 2 T tomato, 1 T onion, 1 T lime juice, ¼ tsp salt and garlic.
- Combine remaining tomato, onion, 2 T. lime juice, salt, cilantro, lettuce, and jalapeno and toss well. Add chicken to the mixture, blend.
- Toast corn tortillas and spread avocado mix over warm tortilla. Top with chicken mixture and shredded lettuce.
