Artichoke and Spinach Dip
Delicious dip for entertaining or taking to a potluck. Serve with cut up veggies or corn chips or toasted tortillas.
Ingredients
- 14 oz. artichoke hearts jar, chopped - (FODMAP)
- 1/2 C. mayonnaise
- 1/2 C. parmesan cheese
- 4 oz. green chiles diced can, diced
- 3 green onions chopped - (FODMAP)
- 1 C. spinach chopped
- sprinkle paprika
Instructions
- Preheat oven to 350 degrees.
- In a food processor or blender, combine the artichoke hearts, mayo, cheese, chiles, onions and spinach and blend.
- Pour in a shallow baking dish, coated with cooking spray. Sprinkle paprika over the top.
- Bake at 350 for 25 – 30 minutes.
Tip
Try using chipotle mayo for an extra zing in flavor.
